Thai Seafood Salad

Thai Seafood Salad

 

 

 Ingredients  

       
        1/4 cup water
        8 ounces sea scallops
        1 pound peeled and deveined medium shrimp $
        5 tablespoons fresh lime juice
        2 1/2 tablespoons fish sauce
        1 teaspoon sugar $
        1 teaspoon chile paste with garlic
        1 cup red bell pepper strips $
        1/2 cup prechopped red onion $
        1/4 cup fresh mint leaves, finely chopped
        8 ounces lump crabmeat, drained and shell pieces removed
        2 fresh lemongrass stalks, trimmed and thinly sliced
        1 cucumber, halved lengthwise and thinly sliced
       
 
Preparation

    .    1. Bring 1/4 cup water to a simmer in a large skillet. Add scallops to pan; cover and cook 3 minutes or until done. Remove scallops from pan with a slotted spoon; pat scallops dry with paper towels. Place scallops in a large bowl. Add shrimp to simmering water in pan; cover and cook 3 minutes or until done. Drain well; add to scallops.
    .    2. While scallops and shrimp cook, combine lime juice, fish sauce, sugar, and chile paste; stir to dissolve sugar.
    .    3. Add juice mixture, bell pepper, and remaining ingredients to scallop mixture; toss gently to combine.

Keripik Jamur


 Tadinya hanya iseng ingin mencoba keripik jamur dari seorang penjual disebuah pameran craft ... ternyata enaak ... jadi ketagihan. Dan kepengen bikin sendiri. Cari-cari resepnya di Google ... wah ternyata ada ... senang .. dapat dari resep masakan Indonesia.. thanks for sharing ... mariii dicoba ... :D

Bahan-bahan membuat keripik jamur:
500 gr jamur merang
225 gr tepung beras
50 ml air
500 ml minyak goreng

Bahan di Haluskan:
6 siung bawang putih
1 sdm ketumbar
1 sdt garam

Cara membuat:
1. Bersihkan jamur, cuci bersih, iris tipis, sisihkan.
2. Campur bumbu halus dengan air, aduk rata, campur dengan jamur, ratakan, diamkan lebih kurang 20 menit sampai bumbu meresap.
3. Tiriskan jamur berbumbu sambil agak diperas agar tidak terlalu basah. Balurkan jamur dengan tepung beras sampai rata, goreng sedikit-sedikit sampai matang dan kering.
Untuk 250 gr

Catatan: sebaiknya lauk kering sebelum disimpan dalam toples, dinginkan dahulu. Bila kurang kering panggang dalam oven dengan api kecil sampai kering.

How to Make Home-Made Shaved Ice

Saya tergila-gila dengan Kakigori atau Shaved Ice ... dan berpikir untuk membuatnya sendiri, mungkin cocok untuk berbuka puasa ... (^.^)


How to Make Home-Made Shaved Ice

Instructions

Things You'll Need:

  • cardboard milk carton
  • cheese grater
  1. Step 1
    Reuse a half-gallon cardboard milk container. Rinse out all of the milk reside with soap and water. Fill the milk container full with clean water and replace the cap. Place the milk container into the freezer and let it sit to freeze for two days.
  2. Step 2
    Remove the milk container from the freezer. By this time, after letting the water freeze for a couple days, the milk container should be starting to rip and break off from the ice. Once the water has successfully been frozen place the milk container onto a cutting board. Rip off the cardboard milk container from the now block of ice. Remove all of the cardboard while doing your best to have as little contact with the actual ice as possible. Your body heat will melt the ice.
  3. Step 3
    Shave the block of ice. Use a cheese grater that captures content internally. Place the grating side of the cheese grater directly on the ice and firmly use a scrubbing action to move the grater back and forth. If you grate from the corners of the block, the ice will shave much faster. When ever the cheese grater fills up with shaved ice, empty the contents into a glass bowl. Continue grating the ice block in the same fashion.
  4. Step 4
    Store the shaved ice in the freezer. While shaving the block of ice, it may be a good idea to keep the bowl you will be storing the ice shavings in, in the freezer. You want to freeze the shaved ice before it starts to melt to ensure that all of the pieces will remain separated.
  5. Step 5
    Serve your homemade shaved ice in a variety of ways. You can make homemade snow cones serving juice over shaved ice. In addition, you can use your homemade shaved ice in beverages, including all of your favorite alcoholic drinks.

Miso Soup


I love ... Miso Soup .... I wanna make my own Miso Soup


Ingredients (serves 4):

  • 4 cups water
  • scant 1/4 cup katsuobushi, which is dried fish flakes (go to a specialty store that sells Japanese food, you may want to call ahead to make sure)
  • scant 1/4 cup dried seaweed (we used wakame this time but Takako said whatever is fine)
  • 2 1/4 TB light (or dark) miso, I bought mine at the specialty store but make sure you ask which one is natural, because the other brand they sold had msg in it, you can buy miso at most places though with English printed on it so you know what you’re buying. I don’t understand a darn thing on my package!
  • 8 oz extra firm tofu (or less if you want less)
  • green onion for garnish (just the green part, not the stalky crunchy part)

Method:

  • Put water in pan over medium to low heat. Put katsuobushi in a tea basket or strainer basket that won’t overfill into the water, cook on low until tiny bubbles form and start moving up to the top, about 10-15 minutes. Takako said it’s important not to let it boil once you add miso or the boiling water will ruin the miso flavor and you can’t taste it.
  • Meanwhile, put seaweed in a bowl of cold water, no need to measure, I think my bowl had almost 3 cups of water in it. It’s very fun to watch the seaweed expand. I felt like a kid watching some plant grow in fast-forward. It’s fascinating:) Something great for when you’re bored.
  • Once those bubbles start forming in the water with the katsuobushi, add miso to the strainer basket and mix it up with chopsticks – the miso will disperse in the soup. Some misos are chunkier, so then the chunks won’t get all over the place.
  • Drain seaweed and add to the broth
  • Add tofu cut into 1/2 inch cubes or smaller. Takako cuts the tofu over the pan like her mom does as she adds it. She said sometimes the tofu is too soft to cut properly on the cutting board so it’s easier just to do it over the bowl in her hand and put it all in at once after cutting
  • Remove the strainer basket, serve in bowls and add green onion for garnish
